Any big differences between brands on DOT 3 brake fluid?
I used Prestone Max synthetic in my wife's car and my truck. Any reason to not use it in the Camaro? Any better options for a non-tracked but routinely driven at Texas highway speeds road car?

I always use Valvoline synthetic DOT 3&4...
sure the Prestone is fine...

For normal street driving it doesn't really matter as long as you flush it occasionally.
Here is one boiling point temp comparison chart. If you are tracking and maybe mountain road driving it will make a difference. Pay attention to the wet boiling point (higher is better).
