The music bluetooth (A2DP) is different than the phone call bluetooth. They use two different profiles and in the Camaro that's two different modules. Your phone is pausing/muting the music and is likely just making the call and using the normal mic/speaker. I'm not sure if your onstar module is different (or just non-existent) but you may need to order one of those and update the firmware for the radio. I know that there is two separate programmings for the radio depending on whether it's an international or US car.

What I learned from reading this thread (and other threads dealing with this problem) is: GM disables the OnStar function in export cars - bluetooth function is disabled too.
I live in Europe and I have an US-Camaro with the OnStar function. OnStar is not available in Europe (it was available for Opel until 2004), so the OnStar function doesn't work here. But the bluetooth-phone-function works great.
So why does GM disable the OnStar function? In my opinion it doesn't matter if you have a non-working OnStar function, but it does matter to have the bluetooth function.

My problem is that my Camaro has an issue with the bluetooth-music-function. I know that this is a well-known issue here on Camaro5 and the problem is solved by a software-update which can be done at your dealer. But here in Europe there is no software update available. There are no Camaro dealers in Europe...

What issue are you having with the bluetooth music? I don't think any of the software updates really make a big improvement on that.
