After warm up and driving at highway speeds mine reads about 200-205 as well, even in the cold wet Oregon winter. I think that's about normal for the V6.

I once asked a GM rep. about my engine running hot. It was at a Corvette event. He told me that unless the coolant is boiling there is no such thing as "too hot". He said that the hotter the engine runs the better it will perform. At least that was the factory guys take on it.

I drove about two hours and my coolant temp was stable right around 200

yeah 200 sounds about right, and yep the car could def be low on fluids from the factory. The day I picked up my car it was low on oil as well coolant. Thank god I checked it as I was driving 700 miles to go home

I wouldn't worry until you get about 220s, then start worrying. I actually put a additive into my coolant fluid and on the highways I'm stable around 194/5 @ 75mph. I don't reach 200 now unless I'm at the track.

I wouldn't even worry at 220's The electric fan kicks on at those temps. I was sitting in Woodward Cruise traffic one evening and not moving at all. It was very warm out and I noticed my coolant temp. was climbing. Got to the point I started to "worry" right around 220. Then i heard a fan motor (or at least I think that is what I heard) and the temps. started to drop back down to normal of 200 - 205.

What additive did you add?
