What is the best rpm to launch a manual V6

Depends on tires, mods, weather, track preparation. Try 2k and go from there.

What he said. Last year I wasn't able to get a decent burnout, I would launch right around 2 grand and stab the gas, feathering as it slipped. The car wouldn't make enough torque to lose traction but for a brief second. My best 60-foot was a 2.0 which drove me nuts because I wanted under that 2 so bad. This year I've done some things and I'm upping the rpm's.

If you're looking to run it quite often let me know how your runs go. My car would get 2 or 3 good runs in and steadily drop off as the clutch would get the heat into it.

Just from playing around on the street I hold her around 2500rpm and start letting out the clutch and giving her gas. somewhere around 15-20 feet the clutch is out and the go pedel is wtfo. This can be done on my fairly stock car on coarse concrete with barely chirping a tire. On a preped track you could probably hit it harder. I use the same techique on the bike and run 1.6-1.7 60ft on a bagger at the track. This takes some practice to learn the feel to get it right to not spin or bog.

Stock tires, ~2,700 seems to be golden.

Don't think that dropping the clutch at any given rpm will be perfect. To much rpm=spinning tires to little=bog. I know its hard on a clutch but the right amount of slippage is your friend for good 60ft times.
