Does anybody know when they will be producing the car with this option?

No one knows for sure at this point.

It's been announced that it's a dealer option only......for now.

What happens if I don't cancel that option? Will the fine folks in Oshawa install it or will my dealer install it?

And can anyone give an educated guess as to what kind of time-frame I'm looking at? I ordered my car on 10/20/2008. I don't plan on deleting the option because I'm not in any hurry to get my car (gives me more time to save, pay off my truck etc.,etc., etc.).

For reference: 2SS, LS3, black/black, polished aluminum wheels, Hurst STS.

It will probably be removed from your order automatically if it hasn't already. If you want your car any time in the near-mid future, you should remove it. BTW, Oshawa will definitely not install it. In fact, your order would be rejected before that happened.
