New Era race intake. P015b code a few minutes after startup. But it hasn't come back since I cleared it.

Yes. Stock exhaust with the fuse pulled.

Wife and I went for a drive today, and she didn't notice the difference. (Kept my foot out of it of course).
It really sounds like the stock exhaust at idle, with just a bit deeper tone when putting around. But when you floor it, it's much louder and raspier. In a good way.

Are there any benefits to having the headers coated?

Helps keep the exhaust heat out of the engine compartment.

I see there's 2 options for cat connectors (Stock & Performance). Which did you go with?

It's mostly to keep them looking pretty.. The coating does keep the engine bay cooler, but that doesn't really translate into any performance benefits. We run the uncoated out on the road course and have never had a problem with anything melting/overheating etc.

You will want to go with the factory conection if you want it to connect to your stock cat-back.

Feel free to call, PM or email me anytime with questions.

Stock. So they would connect up to my stock exhaust.

Your exhaust ports on the headers are round. Aren't your head exhaust ports D shaped? Might make for some turbulence if it does not match? Kooks does make D shaped ports for the Corvettes.
