Its a tough one. I've questioned myself over zl1's I've raced two and I've beaten then both. Once with headers and once with stock manifolds just intake and tune. I'm hoping the drivers didn't know how to race or that there is a mode that you should put the car in if you are racing

Consider zl1 auto and mustang autos are 6 speeds, by 6 speeds you mean manual cars? There is no other option for those cars besides 6 speeds.

I've crushed 5.0s in all sorts of races in both of my cars. 5.0 has no chance. Aim lower...

I wouldn't say no chance. Drivers can make a hell of a difference. Traction also depending on what tires. Both stock tires, I say zl1, but if the mustang has decent tires it could go the other way.

Had a Boss try to roll race me in the M5. Didn't work out for him, and he exited the highway as soon as he could.

As soon as it stops raining here I can go line up my 5.0 with JonZL1s mildy modded (cai, catless pipes, etc) 2014 ZL1 and see what happens. I would bet the mustang wins from a dig and the zl1 from a roll with it being close.
There is no such thing as someone having no chance. My vette makes 3X the power of my mustang, but if my wife is driving the vette and I'm driving the mustang, I would bet on the stang. ZL1 should be faster, and is the faster car, but racing isn't always about the faster car.
