Mine ranges between 189 and 204 in traffic. My tune is configured to start the fans at 45% when coolant temp reaches 192.

180 - 204 depending on outside temp (hot > 80*) sitting in traffic on a hot day 190's to low 200's
160-170's on the highway if temps are below 65* -Don

With a dual pass radiator, and a half filled block, my temp has never been over 185 ish, idling, on the Dyno or at the big end of the track on a hard one mile pull...
