20x10 up front?
Any way to do this without having the wheel stick out from the fender? Or should I just stick to a 20x9?

20x10+23 offset up front. This is the same size and offset that the 1LE and ZL1 use up front on 285-35-20's.

Wheels I want come in 20x10 with 20mm offset. Would small spacers (5mm) accomodate? I'm still trying to wrap my head around all the terminology with wheels. While we're at it, what sort of offset should I look for with a 20x11 in the back?

The 1LE and ZL1 rear wheels are 20x11+43 offset. If you are lowered and are going to run a 40 series tire, i.e.; 275-40-20 up front you will rub under extreme conditions. Autox, road course, etc. Run a 285-35-20 series tire up front and in the rear, (1LE setup) or a 305-35-20 in the rear (ZL1 setup). This image may help you understand wheel offset. The car and will handle better with a 35 series tire.

Won't my speedo need a recalibration to accommodate for the shorter sidewall?

Use this to detemine if you need to recalibrate.
http://www.discounttire.com/dtcs/infoTireMath.do A stock rear SS tire is nearly identical to a 315/35/20 except for width.

According to this, my speedo will read a small hair high, not even 1mph difference until I'm up over 100mph
