ABS + bleeding brakes = ?

I'm planning on getting rid of the stock lines on my car and replacing them with some stainless steel lines, but was curious about the procedure. I'm not new to bleeding brakes by any means but I've heard people mention about not running the reservoir dry or else you need to head to the dealer to them to cycle the ABS valves.

Whats the easiest way to go across changing the lines, one at a time then replacing the lost fluid in the reservoir then bleeding that line right after install? How do the ABS valves come into play during normal bleeding?
