I think I read somewhere where it said the 2011 Camaro will come out in August of 2010 and the vert in Feb of 2011.

This scenario is very likely. If the two models aren't released around this timeframe, it'll probably be only a couple months off. But then again, nobody knows for sure because Chevrolet HAS NOT made any official announcement (except for the Convertible). Until they do, any speculated dates are subject to change.

Again, nobody really KNOWS the release date(s) and anybody that does would be breaching the confidentiality agreement they most likely signed if they were to tell anybody early.
