New oil will be thicker for the first 100 miles or so. It should settle down soon.

Its normal for the gauge to be pegged at certain times.
Only worry about it if it gets low oil pressure. Its an overhead cam, tight tolerance engine the oil pump is just doing its job, need lots of oil pumped up to those cams. |

I disagree. Pegging out is not good. There is such a thing as too much oil pressure. If too much oil is put in, that creates more than normal pressure at high RPMs and that is NOT good. Look under your car, get under there if u can and look for any signs of oil leak or seepage. If you find any, you got your answer.

When I had my 350Z it would peg out on the oil pressure gauge whenever I accelerated hard. Even under light acceleration the needle would move a little bit; as the car warmed up to operating temperature and while cruising the needle would be constant. So I think it's pretty normal

Pressure is the direct result of flow. The orifice or all the galleries and passage in block, head, crank, cam, etc.. all the stay the same. Your oil pump is a fixed displacement pump which increases flow with engine RPM. The result of the increased flow is an increase of pressure. So oil pressure will fluctuate from low idle to high idle.
