Regarding using ramps for changing the oil, will ramps place the car at such an angle that not all the oil will drain out? Or should I not worry about this.

I would not worry about it, you are putting in 8 qts. There might be a pint (probably less) in the pan. The dillution by the new oil would make it a non issue.

This will be the first vehicle I have ever done my own changes on. What size wrench will I need for the drain plug? Also, what is the best wrench for getting the old filter off and new one on?

Don't cheap out on an oil filter wrench and there are different ones for the kind of access you got.

Done it so many years without one I still do the screwdriver trick.

I have a good friend who is a factory rep for Nissan, USA, and deals with these issues almost on a daily basis. According to him, if you change oil at the dealer, honoring drive train warranty resulting from failure in this area is pretty much a given. Go to Jiffy lube, even with receipts, good luck, maybe. Change your own oil, lots of luck, probably will need to get out your checkbook. Of course, this policy will vary from manufacturer, but keeping good records and performing required tasks are going to be good ammunition if needed. My dealer lets me bring my own oil and changes it for about 15 bucks, including chassis lube, so I have a record that the dealer did it; just have to trust that the 8 qts. of Mobil1 I brought doesn't end up in the mechanics car. Seriously, they have been the #1 Corvette dealer in the area for years and have a pretty good reputation.
