Last time my low fuel light came on it took 16 gallons to fill it. so by that logic I have 3 gallons left.

I should have said, it doesnt require fuel to be covering the pump to cool. The fuel going through the pump is what cools it more than the surrounding fuel does. You dont want to run them completely dry of course, but since the car will shut off before that happens it shouldnt be a real problem. (but not something you'd want to do frequently)

So just do like most of us and don't let it below 1/4 tank. safer, better for the fuel pump.
