What is normal coolant temperature for normal and low rpm driving?

Outside temperature around 32F.
Coolant temperature 203F while driving under 3k rpm.
207F while idle.

Are these normal?

My coolant stays around 190F, regardless of weather conditions, when driving "normally".

That's normal. V6s have a different thermostat than the V8s and run hotter. They also seem to like it hotter (engine temp, not air). Worry if you start getting above 210 while driving.

190 For the LS3 with stock thermostat and 176 with the 160 thermostat for average driving on the freeway.

Does LS3 thermostat fit to LLT?

Im not mechanic so I probably wont change it. But just asking.
